2 cups baked corn chips
1 cup of slow cooked pork (optional - can substitute pork for chicken, beef or no meat product)
1 cup of corn, black bean salsa
1 cup shredded Cheddar cheese
1/2 cup of jalapenos
1/2 cup sour cream, (optional)
Preheat oven to 350 degrees (F). In an ovenproof baking dish, put down a single layer of corn chips. Cover with a layer of the pork or other cooked meat, salsa and cheese. Continue layering, ending with cheese on top. Bake for 10-15 minutes or until cheese is melted and bubbling. Top with jalapenos and sour cream and serve hot.
